Golden Milk

(2 Servings)
All Organic Ingredients

4 cups organic, unsweetened almond milk
2 T organic, raw honey (1 T for each cup)
2 T cold pressed unrefined coconut oil
2 tsp ground turmeric (I prefer fresh)
2 cinnamon stick or 2 tsp ground cinnamon
2 tsp freshly grated ginger
2 star anise pods
fat pinch of freshly ground black pepper

In a small pot, bring to an angry simmer almond milk and the rest of the ingredients except for honey. Put honey at the bottom of the mugs you plan to serve the golden milk from. When the milk turns a golden yellow, pour through a sieve into a mug. Let cool a bit, and Enjoy!

Pasta Avofredo

(2 servings) 
Vegan, All organic, non-gmo ingredients

1 - 10 oz box gluten free pasta of your choice (I like quinoa thin spaghetti)
2 small ripe avocados
2 Tbsp lemon juice
3-4 large cloves garlic, pressed
2-3 campari tomatoes, sliced into small wedges
5-8 sundried tomatoes, diced
1 Tbsp fresh basil (or 1 tsp dried basil)
1 tsp italian herb seasoning (no salt)
Small handful of pine nuts (optional)

To taste:
Himalayan sea salt
Freshly ground black pepper

Prepare pasta according to package directions. Salt well.

While the pasta boils, prepare the "sauce." 
Mash avocado with a fork in a large, non-plastic bowl, add lemon juice. Add garlic with a garlic press, stir in with fork. Mix in remaining ingredients. When the pasta is cooked, drain then add quickly to avocado mixture and toss well. Plate then add a few pine nuts to the top.

For years, I have been begging Starbucks to create a low-carb/sugar-free version of the addictive Pumpkin Spice Latte. My requests have gone unanswered. So, I've developed my own version at home.

Pumpkin Pie Latte for One

16 oz. of your favorite coffee, either plain or vanilla or hazelnut flavored, hot
2 Tablespoons canned cooked pumpkin (not pumpkin pie filling)
1/8 teaspoon cinnamon
1/2 teaspoon pumpkin pie spice
3 packets coconut sugar or 1 1/2 T organic agave syrup
1/4 C So Delicious coconut milk or almond or soy or flax milk

Blend pumpkin and spices and sweetener with a fork in the bottom of a heatproof cup. Pour hot coffee into mixture while stirring; add the milk. If you prefer iced, fill a large plastic (preferably re-used to-go cup that's at least 24 oz.) with ice and pour pumpkin pie latte over ice. Sip your way to heaven.
